Visiting Kennecott Copper Mine

The largest open pit copper mine in the world is in our back yard!  Evelyn and I visited a couple days ago with Shelly and her kids.  It was a perfect day, not too hot, then after, we visited a park in Copperton.  This is a quaint little town at the base of the copper mine.  What a fun day!To get to the mine, we parked below, and rode a bus to the top.  This was Evelyn’s favorite part of the entire day!  She was so excited to be in a bus and be able to look out the window.

What a fun day riding the bus!A storm had just passed through, and so there were puddles of water still draining out the top.  Of course, a two year old would find that….

Later that day….we went to this fun park.  Evie took the side road instead of the ladder going up, but loved coming down the correct way!

Craft exchange party

I joined a craft exchange party this past month.  This is what I made and sent to my partner.  I hope she likes it!  I asked her if she had any requests for vinyl projects and this is what she wanted.  I think it turned out really cute.

I came upon this recipe online and want to try it.  I am actually trying out a new blogging tool that I just found to post onto my blog.  I hope this works.  This is a test….!  I’ll report back after I learn how good these cookies turn out!

S'mores Cookies from The Girl Who Ate Everything

S'mores Cookies

11 Tablespoons unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon sea salt
1 teaspoon cinnamon
2 ½ cups flour
1/2 cup semi-sweet chocolate chips
1 cup mini marshmallows
3 regular sized Hershey’s bars, broken into pieces
1-2 packages graham crackers, broken into squares
Directions:
Preheat the oven to 375 degrees. Line baking pans with parchment paper. I used one 11x17 pan and one 9x13 pan but you can really use any sized pans you want.
Lay out graham crackers side by side on the pans as close as possible (they should be touching). I used 16 graham cracker squares on one pan and 10 squares on another. You may have to add or remove graham crackers according to how much dough you have. If you want your cookies thicker you will use more dough and less graham crackers.
In a medium bowl, whisk together the flour, baking soda, sea salt and cinnamon to combine. Set aside.
In the bowl of an electric mixer, cream butter with white and brown sugar until light and fluffy. Add the eggs and vanilla and mix until combined.
Add the flour mixture to the butter mixer and combine on low speed.
Fold in the chocolate chips and marshmallows. Chill dough in refrigerator for 1 hour to overnight (I did one batch right away and another after chilling overnight and found there was no difference.)
Place tablespoons of dough on graham crackers about 1 – 1 ½ inches apart. I averaged about 1 1/2 tablespoons of dough per graham cracker square as seen in the picture above. Press down slightly with fingertips.
Bake for 5 minutes then remove from oven to press Hershey’s bar pieces on to the top. You can place as many pieces or as little as you want depending how much chocolate flavor you want.
Bake for 5 – 7 more minutes or until dough is beginning to turn golden brown at the edges. Remove to a wire rack to cool. For clean cutting make sure cookies are completely cool and cut with a sharp knife.

4th of July

I’m a little late, but I wanted to document this fun holiday weekend.  We went to the parade in my hometown Saturday morning, and then, among other activities, we enjoyed fireworks at my brother’s house.  Evie thought the pops were the best fireworks ever! 

Finally, it's HOT!

It was finally warm enough to try out our new waterslide. Evie had a ball playing in the water, and she has begged me every day since to play in the water. She had fun playing with her cousins and aunts & uncle. This is one reason I like that it's finally hot. Other than that, it could stay cool all year long!

Grandpa Don't bday party

Of course, I throw a party, and forget to take pictures DURING the party! Evie helped me set up the back yard. It was a perfect night to host a birthday dinner for grandpa Don. The flowers are from a bush that neighbor my yard with another, and I didn't even know it was there until a few days earlier. When I set the table, I remembered it, and cut some branches off! I love how it turned out.
